Did you know that the peels of fruits and vegetables often have a high concentration of nutrients? Try to figure out ways to use peels and stalks in other meels.
Tomatoes - I recently blanched and peeled tomatoes for freezing. I saved the peels, and baked them with green peppers and taco shells. It was great! I'm going to start adding them in place of tomatoes for other recipes too, to see how it goes.
Potatoes - the peels can be used to make a crunchy snack. Just sprinkle with oil, salt, pepper, and spice of your choice, then bake at 400 degrees until crisp.
Oranges - according to Prevention magazine, you can add them to chili.
Vegetables stalks - try tossing into stir fries or hot dishes.
Carrot peels - shred and add to ground meat dishes.
Apples - add do sandwiches for a sweet crunch, or chop finely and add to salads.
Kiwi - I had a friend who used to bite into kiwi, peel and all. I can't do that, but according to Prevention, they can be added to smoothies!
