Caramel Roasted Pears
Sweet pears coated in sticky syrup…mmmm! Serve with low-fat
natural yogurt for a knock-‘em-out finale!
Serves 4
Vegetarian
4 medium pears, halved and cored
1 rosemary sprig
8 level tbsp sweetener
¼ cup (60g) honey
1 thick strip each of orange peel and lemon peel
1 cinnamon stick
Fat-free plain yogurt, to serve
Preheat the oven to 400°F.
Place the pears, cut-side up, in a shallow, ovenproof
dish to fit snugly in a single layer.
Place the rosemary, sweetener, honey, orange and lemon
peel, cinnamon stick, and 7fl oz (200ml) of water into a small saucepan over a
medium heat. Bring to a boil and remove
from the heat.
Pour this syrup over the pears and bake in the oven for
15 minutes or until lightly browned and cooked through. Serve with fat-free plain yogurt.
