My mom makes this every summer. Now that I have my own rhubarb, I'm going to make it too! Don't have your own rhubarb? It's pretty easy to find someone with plenty to give away - just ask around! Consider growing your own; it's hard to kill this plant.
Dice rhubarb. Boil with 1/4 c water and mash well. Add strawberries (optional) and 2 1/4 to 3 c sugar. Total amount of fruit should be about 5 cups; use less sugar the more strawberries you use. Bring to a boil again. Add one small package of strawberry jello. Put into containers and freeze until needed.
