How do you get your kids to eat veggies? For a long time, my daughter would only eat veggies if they were in something - never plain. She absolutely loved noodles and would usually eat rice, so we often stuck vegetables into noodle- or rice-based dishes. Of course, we'd do the traditional tomato-based sauce, but we got her to eat finely chopped broccoli, peas, carrots, asparagus, and more that way. Once she'd had them in a dish for a while, she was willing to eat them plain too.
We've gone the puree route too - pureeing veggies and sticking them in other foods. There are whole books and websites devoted to doing that, although I only did the basics (carrot or pumpkin purees in spice muffins, for example).
