There are a lot of ingredients you can substitute, or "leftovers" that you can reuse. Here are just a few.
Use leftover grease from frying bacon to saute vegetables.
Use chicken or ham bones to make soup. Cook in a crock pot with water until the remnant meat falls off, then take the bone out and add vegetables.
Use cranberry juice instead of red wine or apple juice instead of white wine in recipes.
Use 3 Tbsp cocoa powder with 1 Tbsp butter instead of 1 oz unsweetened chocolate.
