Mealtime Magic: Healthy St. Patrick's Day Recipes

If you’ve got a ‘paint the town green’ party planned or you fancy trying some traditional food from the Emerald Isle, enjoy some of these delicious St. Paddy’s Day dishes courtesy of Slimming World USA, safe in the knowledge that your weight loss will stay beautifully on track.

ingredients

3 leeks, peeled, thinly sliced and rinsed thoroughly
5 potatoes, peeled and diced
5 cups of water
salt and freshly ground pepper

method

1. Put the vegetables and water into a large pan. Bring to the boil then reduce the heat and allow to simmer for 15 minutes.

2. Transfer to a food processor and blend until smooth.

3. Season well before serving.

Tip: This recipe is suitable for home-freezing.



St. Patrick’s Day without corned beef and cabbage just wouldn’t be the same. Enjoy with a pile of potatoes and your favorite Superfree vegetables.

ingredients

1 medium onion, cut into wedges
3 garlic cloves, minced
1 bay leaf
2 tbsp cider vinegar
½ tsp pepper
1 x 3lb corned beef brisket (lean and all visable fat removed)
cabbage and potatoes, to serve
spice packet, cut in half

method

1. Place corned beef, onion, garlic, and bay in a large pot. Cover the beef, add the vinegar, pepper, and spice pack (or mixed spices). Bring to a boil, then simmer for 2-3 hours until the beef is tender.

2. Remove the beef and rest for 10 minutes before slicing/pulling/cubing. Serve with mashed, baked, or boiled potatoes, and cabbage.
 
Amaze your guests (or simply your stomach!) with this Irish beef and Guinness casserole for a true taste of hearty Irish cooking!

ingredients

2lb lean Irish beef fillet
2 garlic cloves, 6 small onions, 2 celery sticks, 6 carrots
A small handful of fresh parsley
One calorie cooking spray (like PAM)
½ cup Guinness
3½ cups broth made with beef bouillon
1 bay leaf
salt and freshly ground black pepper

method

1. Cut the beef fillet into chunks. Peel and crush the garlic. Peel and quarter the onions. Cut the celery sticks into chunky pieces. Peel and thickly slice the carrots. Chop the parsley. Preheat the oven to 325°F.

2. Spray a large non-stick skillet with PAM and place over a medium heat. Add the beef and stir-fry until browned on all sides. Next, add the vegetables, Guinness and broth. Season well and add the bay leaf. Bring to the boil. Transfer to a medium casserole dish and cover. Cook in the oven for 1½-2 hours or until the beef is tender.

3. Remove from the oven and sprinkle over the chopped parsley before serving.





Enjoy this Free side-dish of traditional colcannon made with potatoes, cabbage, scallions and mustard. Colcannon is also extra-tasty shaped into cakes (or should that be Patty!) and fried in one calorie cooking spray like PAM.

ingredients

2lb potatoes
½ cabbage
6 tbsp fat-free natural yogurt
3-4 tbsp freshly chopped parsley
4 scallions
One calorie cooking spray (like PAM)
1 tsp mustard powder
salt and freshly ground black pepper

method

1. Peel and chop the potatoes, boil for 20-25 minutes or until tender, drain, return to the pan and keep warm.

2. Meanwhile, slice the scallions and shred the cabbage. Place in a skillet sprayed with PAM and fry for 5-6 minutes. Add 4 tbsp of water, cover and cook for 3-4 minutes until softened.

3. Stir the cabbage mixture into the potatoes and roughly mash. Stir in the yogurt, mustard powder, chopped herbs and seasoning to taste. Serve immediately.

ingredients

5 fl oz of strong, fresh coffee made with boiling water
1 tsp sugar substitute
1 fl oz Irish whiskey
4 level tbsp aerosol cream, light

method

1. Get a clear, glass mug and pour in boiling water to warm the glass up. Remove water.

2. Pour in the fresh, black coffee and add the Irish whiskey. Stir in the sugar substitute.

3. Add your cream and serve.
