The Ultimate Bacon and Egg Sandwich
Serves 1
Ready in about 10 minutes

Ingredients:
2 slices of Canadian bacon, all visible fat removed
One whole-wheat roll
Zero-calorie cooking spray
1 large egg
1 level tablespoon extra-light mayonnaise
2 leaves of lettuce
2 slices tomato
Salt and freshly ground black pepper

Preheat a small grill to medium-high heat and grill the Canadian bacon for 2 to 3 minutes on each side, or until crisp and lightly browned. Spilt the roll in half and lightly toast both sides. Meanwhile, place a small frying pan sprayed with zero-calorie cooking spray over medium heat. When hot, fry the egg for 4 to 5 minutes or until done to your liking. Spread half the mayonnaise over the cut sides of the roll. Arrange the lettuce on the base, then add the remaining mayonnaise and the tomato, bacon and egg. Season and top with the roll lid for a healthy, delicious start to the day.

Chinese Chicken and Mushroom Soup
Serves 4
Ready in about 20-25 minutes

Ingredients:
¾ pound cooked skinless, boneless chicken, sliced into thin shreds
1 bunch scallions, trimmed and chopped
½ inch piece root ginger, peeled and grated
1 cup small shiitake or button mushrooms, sliced
2 tablespoons dark soy sauce
2 tablespoons dry sherry
2 level teaspoons light brown sugar
5 cups chicken stock
¾ cup carrots, peeled and sliced
1 cup baby corn, trimmed and sliced

Place the chicken in a bowl and stir in the scallions, reserving a few for garnishing. Add the ginger, mushrooms, soy sauce, sherry and sugar, mix well and set aside.
Pour the stock into a large saucepan and bring to a boil. Add the carrots and baby corn and simmer for 1 minute. Stir in the chicken mixture, bring back to a boil and simmer for 10 minutes.
Serve the soup garnished with the reserved scallions.

Pasta with Salmon and Asparagus
Serves 4
Ready in about 25 minutes

Ingredients:
4 lightly smoked boneless salmon fillets (about 4 ounces each)
Finely grated zest and juice of one lemon
Salt and freshly ground black pepper
14 ounces dried farfalle pasta
1 cup fine asparagus spears
1 cup tender broccoli
¾ cup low-fat Greek yogurt

Preheat the oven to 390F. Put the salmon on a large sheet of foil, squeeze over half the lemon juice and season. Bring up the sides of the foil and scrunch the middle tightly to seal. Put on a baking tray and bake for 12 minutes, or until just cooked through.
Cook the farfalle according to the package instructions. Drain and return to the pan. Meanwhile, boil the asparagus and broccoli for 3 minutes, or until just tender. Drain.
Peel away the salmon skin and thickly flake the flesh. Mix the Greek yogurt with the lemon zest and remaining juice, season to taste, then spoon onto the pasta. Add the vegetables and salmon and stir gently. Top with freshly ground black pepper.
