I love this Norwegian cookie!
3 c flour
1 t baking powder
1 t baking soda
1 c buttermilk (I use buttermilk powder)
1 c sugar
1 egg
1/2 c butter
pinch salt
1/2 t vanilla (a high-quality vanilla like Nielsen-Massey makes a big difference if you like a rich vanilla flavor)
Mix ingredients together. Chill, covered, 8 hours. Divide dough into about 4 dozen pieces. Roll each into a thin snake (about pencil thickness) and twist into a pretzel shape. Bake 10-15 minutes until just barely brown.
