Greek yogurt is a hot food these days. With higher protein content than regular yogurt, it's designed to keep you fuller longer, and still have the probiotic benefits. What many people don't think about is it makes a great substitute in a variety of dishes.
THE GREEK YOGURT KITCHEN, which will be released May 6th, provides many delicious recipes that use Greek yogurt. It begins with a great informative section, detailing the health benefits of Greek yogurt and how to buy. Then it has over 100 recipes for breakfast, snacks, appetizers, main courses, sides, and desserts. Here's a delicious sample.
White Bean Dip
1 15-oz can no-salt-added cannellini beans, drained and rinsed
2 T olive oil
1 T low-fat plain Greek yogurt
1/4 t salt
1/8 t paprika
Place all ingredients except paprika in a blender or food processor and puree until smooth (about 1 minute). Transfer to a serving dish and sprinkle with paprika. Serve immediately or cover and store in the refrigerator for up to 3 days.
