Mealtime Magic: Ham & Egg Soufflé

Serves 4
Ready in 25 minutes
Ingredients:
Low-calorie cooking spray
2 large eggs, separated
4 oz (110g) lean ham, finely chopped
1 tbsp finely chopped tarragon
¼ cup finely chopped fresh flat-leaf parsley
1 tbsp finely chopped chives
Salt and freshly group black pepper
1. Preheat the oven to 400°F.
2. Lightly spray four individual ovenproof soufflé dishes with low-calorie cooking spray and place on a baking sheet.
3. Separate the eggs and beat the egg yolks in a bowl until pale and fluffy.  Stir in the ham and herbs, and season well.
4. Whisk the eggs whites in a separate bowl until softly peaked and, using a metal spoon, fold in the ham mixture.  Spoon this mixture into the prepared dishes and bake for 12 – 15 minutes, until risen and golden.  Remove from the oven and serve immediately.
Hot tip!  This soufflé is also delicious with shrimp rather than ham.  Swap the tarragon for fresh dill.
