Mealtime Magic: Healthy Sandwich Tips

Whether grilled, filled with seasonal fruits and veggies or chilled perfectly for a picnic, sandwiches are a timeless summer staple. No one knows this better than renowned Chef Fabio Viviani, who is teaming up with Arnold/Brownberry/Oroweat Bread to encourage sandwich lovers across America to enter their favorite “better-for-you” sandwich recipes this summer in the first-ever “America’s Better Sandwich” Contest.
As a sandwich lover and a stickler for fresh, seasonal ingredients that let foods’ naturalgoodness shine, Chef Fabio understands the importance of using whole grain bread as the foundation of any better-for-you sandwich. His philosophy? Layer the best bread with delicious, simple and nutritious ingredients to get friends and family asking for seconds at any summer celebration. 

From June 24 to August 17, 2014, wannabe chefs nationwide can visit www.americasbettersandwich.com to submit up to two recipes in each sandwich category: Creative Classic, Stealthily Simple, Fueling Good and Meatless Marvel—all for a grand prize of $25,000 (now that’s a lot of bread!).  Entries will be judged on nutritional quality, unique and creative flavor and perceived ease of preparation. The winners will be announced on National Sandwich Day, November 3.

I had a chance to interview Chef Fabio to learn more about the contest, and also tips for making great, healthy sandwiches.





About Chef Fabio:
Chef Fabio has owned and operated restaurants in his native Italy as well as restaurants across the U.S. Best known for his appearance on season 5 of Top Chef in 2008, earning “Fan Favorite” and returned in 2010 to compete in their Top Chef All Stars edition and a spinoff culinary reality show, Life After Top Chef. Chef Fabio is a recurring guest on shows such as GMA, The Talk, The Chew, Ellen, Good Day LA and Access Hollywood. He is also the host of the award winning web series, Chow Ciao!
