School will be starting soon, and for many families, that means packing lunches. If you're packing lunch for a preschooler, odds are you have nutrition guidelines to follow (I know we do in Minnesota). Even if you're not, you want to make sure you include fruit, vegetable, protein, and carbohydrates for a balanced lunch. Here are some foods that were lifesavers for us last year.
Protein: deli meat, peanut butter (if not forbidden by the school), other nut butters (usually allowed), hummus, tuna, cold chicken breast
Fruit (avoid ones that require peeling or cutting or will turn brown): raisins or other dried fruits, strawberries, grapes, peeled oranges
Vegetables (all of these my daughters happily ate cold): peas, corn, green beans, raw carrots
Carbohydrates (all of these work well cold): noodles, bread, crackers, tortillas, pita bread
You can mix and match too. I often packed noodle salad. It was faster for the girls to eat if they got distracted and required opening fewer containers.
There's a new solution in development to help with the number of containers kids need to open - and also to make it easy to pack hot or cold food: the OmieBox by OmieLife. Right now they're running a Kickstarter campaign that's in "stretch goal phase" and is a divided lunchbox with vacuum insulated containers. It looks like a great solution, so check it out if you're interested!
