From November until March, bright yellow Opals®
are available. They have a crunchy texture and a sweet, slightly tangy flavor. My daughters' favorite part - they don't turn brown like some varieties do! This relatively new variety (grown exclusively in Washington at Broetje Orchards since 2010) is non-GMO, and donates a portion to Youth Make a Difference grants, which support youth-led non-profits involving food, nutrition and agriculture. Their texture and flavor makes them great raw, but also work in nearly any kind of recipe. It's a great, fresh flavor for winter baking or snacking.
