Mealtime Magic: Fall Recipes from RawSpiceBar

A few months ago I posted about RawSpiceBar, and wanted to share a few recipes they've sent me, along with some great flavor blends.

Chai Spiced Apple Clafoutis

RawSpiceBar's Peppercorn Chai
2 eggs
1 c milk or heavy cream
10 T butter
1 t vanilla extract
2/3 c flour
1/2 c sugar
1/2 t salt
4 tart apples, peeled, cored, and sliced
1/2 c plus 2 t subar
3 T brandy

Preheat oven to 400 degrees. Combine eggs, milk or cream, 6 T butter, vanilla, flour, sugar, and salt and whisk until smooth. Melt 4 T butter in a large skillet. Add apples, 1/2 c sugar, Peppercorn Chai, and brandy. Cook until apples are glazed, about 5 minutes.

Add half batter to a greased pie plate. Arrange apple slices on top, reserving juices, then pour remaining batter over apples. Sprinkle remaining sugar on top and bake until golden, 25-30 minutes. Drizzle with warmed reserved apple juices.

Baked Pumpkin Donutes

RawSpiceBar's Unpumpkin Pie Spice
1/2 c vegetable oil
3 large eggs
1 1/2 c sugar
1 1/2 c pumpkin purée
1 1/2 t salt
1 1/2 t baking powder
1 3/4 c flour
3 T cinnamon sugar

Preheat the oven to 350 degrees. Beat together oil, eggs, sugar, pumpkin, Unpumpkin Pie Spice, salt, and baking powder until smooth. Add flour to mixture and combine.

Pour batter into greased doughnut or muffin pans and bake, 15-18 minutes, longer if muffins. Remove and let cool.

While doughnuts are still warm but not fragile, shake gently in a bag with the cinnamon sugar. Serve and enjoy!
