Book Nook: The Mayonnaise Cookbook - 50 Savory and Sweet Recipes Starring the World's Best Condiment

I recently had the chance to review The Mayonnaise Cookbook: 50 Savory and Sweet Recipes Starring the World's Best Condiment. Whether or not you like mayo on your sandwiches, this book can give you lots of new ideas for ways to use it.

The cookbook is well-organized into sections to make it easy to find the types of recipes you want. The pictures make the dishes look great, and the color scheme and font are a fun, upbeat design. There are salads, main dishes, dressings, appetizers, and even cupcakes! If you're skeptical, you shouldn't be - I remember feeling apprehensive the first time I used mayo to make grilled cheese, but it turned out great, and I've used mayo as a substitute in recipes before without any problems, even though my girls don't like it plain. If I were going to offer one criticism of the book, it's that there aren't as many sweet options as I'd like for a title that plays up the sweet side, but otherwise I think the cookbook is great!

I head a chance to interview the author to learn more.

Why did you create this cookbook?

In partnership with my publishing company, we wanted to show love to mayonnaise which is actually the most popular condiment. Studies show that mayo sells twice as much as ketchup or other condiments. So far, it has been a hit with mayo lovers and has even received the attention of “non- mayo” lovers as well!

What makes mayonnaise surprisingly versatile?

Because it can be used in a variety of savory and sweet dishes! In The Mayonnaise Cookbook, you will find 50 ways to incorporate mayo into your cooking with recipes such as lobster rolls, spinach & artichoke dip and homemade mayo so you can whip up your own!

How do you respond to people who might be skeptical about including mayonnaise in sweet recipes?

I encourage everyone to have an open mind and give it a try! The chocolate cupcakes in this recipe are great! Mayo is used instead of eggs and oil in this recipe. The mayo flavor blended with the sugar, cocoa and other ingredients makes it impossible to notice! If/when you try it, I’d love to hear your thoughts!
