Going Green - Amasar Summer Baking

 If you have gluten-free people in your life, you'll want to check out this option for baking - Amasar breadfruit flour. Breadfruit flour is naturally gluten-free and rich in fiber and complex carbohydrates. The waffle and pancake mixes that I've been able to try make deliciously satisfying breakfast options. They aren't quite the same texture as regular wheat flour, but they also aren't too heavy or dense or dry, which I've had happen with some GF flours. 

I also love the fact that Amasar is sustainable and woman-owned. Breadfruit trees are high-yielding, resilient, and environmentally efficient. Plus, Amasar supports local agriculture in Puerto Rico.

The company currently has flour, pancake/waffle mix, and a protein pancake/waffle mix (combined with other flours to have a higher protein content - my younger daughter loves that one because it keeps her full longer). They also have a lot of tasty recipes to try. When I've used the flour in recipes, it comes out with a delicious taste and texture - ever so slightly different from traditional flour, but not at all in a bad way.



Right now you can find Amasar mostly in the eastern half of the US at select natural foods stores, or you can subscribe online.
