Method

Add all the spices and sauté for a minute to get rid of the raw smell. Pour in the vegetable stock, kidney beans, quinoa, diced tomatoes, and sweet corn and mix well. Let it cook for about 20 minutes so that all the ingredients become soft. Serve hot after garnishing with diced avocados and lime.
