Mealtime Magic - Everything "Bagel" Cookies

As the holidays approach, Chef Judi Leib of Whisk in the Southern is thrilled to unveil her newest and most innovative creation yet—the “Everything Bagel Cookie”. Blending the beloved flavors of a classic New York-style “everything” bagel with the comforting sweetness of a cookie, this delectable treat will be the highlight of holiday desserts this season.

 

Judi’s Everything “Bagel” Cookie is an inventive fusion of two culinary worlds, combining the savory and salty goodness of everything bagel seasoning with the irresistible charm of a soft, chewy cookie. Judi carefully crafted this unique recipe, ensuring a perfect balance of flavors and textures to create deliciousness in every bite.

 

Judi came up with the idea for the recipe as she “was listening to an interview with the guys that created Crumbl Cookies. They were asked if there was a cookie flavor that just didn’t work,” Judi said.  “They quickly responded that the everything but the bagel cookie was a bust. Like a light bulb going on, I decided I could make it.  Instead of trying to figure out how to make it with the actual seasoning; I decided I would try to duplicate textures as well as the flavors. So, the onion/garlic became coconut shreds. I wanted a little flavor that your mind would have to think about, so I added tahini. The chocolate was just a fun addition. The salt is optional, but I think it is the perfect finish.”

Everything "Bagel" Cookies

 

INGREDIENTS

  • 1-1/4 Cup Light Brown sugar, packed
  • 3/4 Cup Salted Butter
  • 2 Tbs. Tahini
  • 1 Tbs. Vanilla Extract
  • 1 Lg. Egg
  • 2 Tbs. Poppy Seeds
  • 2 Tbs. Sesame Seeds
  • 1-3/4 Cup All-Purpose Flour
  • 1 tsp. Kosher Salt
  • 3/4 tsp. Baking Soda
  • 1 Cup Shredded Coconut
  • 1 Cup Semi- Sweet Chocolate Chips
  • Maldon Flake Salt for finishing (optional)

 INSTRUCTIONS

  1. Preheat oven to 350°. In the bowl of a stand-up mixer, fitted with paddle attachment, combine sugar, butter, tahini and vanilla until well fluffy and well blended. Beat in Egg. Add in sesame seeds and poppy seeds.

        2.   In a separate bowl, whisk together flour, salt and baking soda.

 

        3.   Gradually mix flour mixture into wet mixture. Fold in coconut then chocolate chips.

 

      4.    Scoop out tablespoon size balls onto baking sheet, 2" apart. Sprinkle a little bit of salt on each cookie, before baking (optional)

 

      5.     Bake for 10-13 minute. I like to rotate them halfway through baking.

Judi Leib is the founder and Chef at Whisk In The Southern.  Judi has done it all in the food business; from attending culinary school to working in kitchens, all the way to becoming general manager of a classic Los Angeles restaurant. In addition to sharing recipes and videos on her website, Judi is frequently asked to conduct cooking classes and demos and has been featured in numerous newspaper articles.  In 2022, she started Challah and Soul, a non-profit organization dedicated to bringing the Black and Jewish communities together through food.
