Mealtime Magic: Teriyaki Chicken and Vegetable Stir-fry

Marinated in soy sauce and finished with a splash of teriyaki, this tender, juicy chicken is rich in authentic Japanese flavors.  The crunchy vegetables add texture and color to the dish, making it a real feast for the eyes – and the stomach.
Serves 4
Freezer-friendly
Ready in under 15 minutes

3 x 5oz (150g) skinless, boneless chicken breasts, cut into strips
1 tbsp soy sauce
Low-calorie cooking spray
2 carrots, peeled and cut into thin strips
1 red bell pepper, deseeded and cut into thin strips
3½oz (100g) snow peas, halved lengthwise
3½fl oz (100ml) teriyaki sauce

Place the chicken in a glass bowl with the soy sauce and toss to coat well.

Spray a large, nonstick wok or frying pan with low-calorie cooking spray and place over a high heat.  Add the chicken mixture and stir-fry for 2-3 minutes. 

Add the vegetables and stir-fry for 3-4 minutes. 


Pour in the teriyaki sauce and stir-fry for 2-3 minutes, or until piping hot, before serving.
