Fun Freetime: Flip My Food

Chef Jeff Henderson hosts “Flip My Food” and goes across the country changing the recipes we eat for healthier lives. Chef Jeff has an amazing story learning to be a chef while in prison and working his way to become Executive Chef at the renowned Care Bellagio and Caesar’s Palace in Las Vegas. He’s also a bestselling author and popular public speaker with an inspirational story about his life and career as a chef. I had a chance to interview him to learn more.

  • Why did you want to get involved with this show? I created the show with producer/director Ted Eccles to show folks that you can enjoy great comfort food using really healthy ingredients with less fat and amazing flavor. Having balance in your diet is the key to living a more for fulfilling lifestyle
  • This show aims to make recipes healthier. What are some of your favorite easy swaps? Garlic-jalapeno olive oil in place of butter, free range organic dairy products vs commercial dairy products, kosher & sea salt vs table salt are just a few of my favorite swaps. I am always finding new ways to replace less healthy ingredients with better tasting healthy versions, while boosting the flavor at the same time.
  • You originally learned culinary arts while in prison and became a successful chef. Can you share a little about that? Well, when I was a young man, I made some poor choices that resulted in my imprisonment. That period in my life was a low point but it gave me an opportunity to change. I focused on finding a way to turn my life around and I found my purpose and my passion in the kitchen. And after that, as they say, the rest is history.
