One category that I find fascinating on Future Food 2050 is food safety. If you've never really wondered where your food came from, it offers a glimpse into the people who do know, and who ensure that the system provides safe food to eat. And just like everything else, the food safety industry is innovating as well, with ideas like biological barcodes to trace fruit and fish. At the same time, new foods are being found to have salmonella.
Another food-safety-related initiative, in a way, is selling consumers on ugly food. Just because a food looks imperfect doesn't mean it's actually unsafe to eat. Trader Joe's president is using that fact to launch a new initiative to bring fresh food that is still safe to people who couldn't afford to pay full price.
