Frame leaves. Find leaves in brilliant colors, and then stick them in a frame between two pieces of glass. The colors will stand out best against a white or light-colored wall; if you have a dark wall you may want to use the regular frame backing.
Stack pumpkins in an outdoor flower pot. Use skewers to keep them together.
Fill little votive candle holders with a variety of foods in fall colors, like seeds, nuts, berries, and more. This would make a very pretty appetizer tray.
Try carving patterns on your pumpkins instead of faces.
Use clear plates, and put a fall leaf underneath each one as a pretty table setting.
Use brown kraft paper or newsprint as neutrals to make the leaf colors pop.
Use dried plants in a vase as a centerpiece. Cattails, tall grasses, and dried flowers are perfect for fall.
