Mealtime Magic: Vegan Cupcakes


Cupcakes for the Vegan
Baking is such a fun activity. You will surely enjoy making delicious goodies at your home. Even the kids will love these vegan cupcakes.

Blue Velvet Cupcakes
This recipe is healthy and guaranteed low fat. You would not need to worry so much about weight gain. With antioxidants from the blueberries, you are sure to fall in love with these delicious tasting cupcakes.

Prepare the following ingredients:
·       One cup of whole wheat flour
·       One fourth cup of cocoa powder
·       One teaspoon of baking soda
·       One and a half tablespoon of cornstarch
·       One half cup of yogurt
·       A pinch of salt
·       One cup of brown sugar
·       One and a half teaspoon of vanilla extract
·       Three tablespoons of coconut oil
·       One half cup of almond milk
·       One cup of blueberries
What you need to do:
Preheat the oven to 350 degrees. Puree the half cup of the blueberries and cut the remaining blueberries into half. In a bowl, place the dry ingredients and mix them until all are evenly distributed. In another bowl mix the wet ingredients. Slowly stir in the wet ingredients with the dry ones. Make sure that you do not overmix. Pour the mixture into 12 cupcake liners and bake for twenty to twenty five minutes. Let it cool before removing the cupcakes.

Healthy and Spicy Chocolate Cupcake
We all love chocolates but being health conscious, you will surely have to give up this sweet treat. However, this cupcake recipe will let you experience this delectable goodness every once in a while.
There is also an added flavor to this cupcake that will make it more special. The extra kick will definitely have you wanting more.

The list of things you need for the cupcake:
·       Two cups sugar
·       Three cups of flour
·       A cup of cocoa powder
·       A cup of melted margarine
·       Two teaspoons of vanilla extract
·       Four tablespoons of vinegar
·       A teaspoon cayenne pepper
What you need to do:
Heat the oven to 375 degrees. Mix sugar, cocoa powder, margarine, cayenne pepper, baking soda and vanilla extract. Mix well until they are blended well together. Add in the flour little by little, add water as you go. Continue stirring until all of the flour and water are used. Add vinegar and mix well. You can use more cayenne pepper if you want a more spicy flavor.
Pour in standard muffin pans. Fill about two thirds of the way. Bake for 15 minutes. Let it cool before removing from the tray. Serve and enjoy!

The list of things you need to have for the frosting:
·       One half cup of margarine
·       Two cups of sugar
·       One tablespoon of vanilla extract
·       One and a half cinnamon
·       One tablespoon of water
·       A pinch of salt
What you need to do:
Mix margarine on the shortening with the confectioner’s sugar. You can use an electric mixer if you want. Add water, cinnamon, and vanilla slowly. Whip up at a high speed. Make sure that the frosting gets fluffy.
Top the cupcake with the frosting but wait until the cupcakes are cool. Top off with sprinkles. Serve and enjoy!
