Those who suffer from Celiac disease cannot tolerate gluten. Carolyn Haeler is a celiac sufferer who spent years seeking out gluten-free cookie brands. One busy holiday season, she was disappointed yet again when a gluten-free cookie crumbled entirely after one bite.
She decided to create her own options, which became Mightylicious. I had a chance to try three of the seven varieties available, and loved all three of them. They were an absolutely perfect texture, sweet but not too sweet, and just the right size to satisfy a sweet tooth. They are individually wrapped, which has its pros and cons, and are all GF, Kosher, and non-GMO.
